A refreshing and tangy raw mango drink, popular in Maharashtra and Gujarat. It's delicious and unusual, made with raw mangos, sugar, and cardamom.

Prepare Mango
Slice the raw mango lengthwise into 3 pieces (one will be the large seed) and transfer it to a heatproof bowl that fits into the inner cooking pot of the Instant Pot. Pour in ¼ cup of water. Cover tightly with aluminum foil.

Unlock and remove the lid. Check to see if the mango is soft and pulpy; if not, cook again for a few more minutes.

Once the mango is cool, pull off the peel and squeeze all the pulp you can off the peel and the seed. Save whatever cooking water remains in the bowl.

Push the pulp and water through a wire-mesh strainer, being sure to get all the last little bits. It should yield about 1 cup of purée.

Add the sugar and cardamom, and stir well until the sweetener is completely dissolved. Stir in the remaining 2 cups of water plus the ice.

Adjust and Serve
